Beef stew is such a hearty meal. I remember growing up and mommy would cook us some beef stew and it was the best meal ever. Look y’all, I know y’all see how crazy this weather is. I mean it snowed in the Sahara Desert this week. The weather has us snowed in some places. Below zero temps in other areas and then some are experiencing sleet, warm temps, and cold temps all on the same day. So there is no wonder we all are sniffling and snorting all over the place. Whenever we experience these types of crazy temps, I pull out the crockpot and make stew. Beef stew that is.
The good thing about cooking beef stew for your family is the vegetables you are getting your family to eat. I wanted to share with you guys a simple throw it in the crockpot and let it cook stew that you can make the night before or even put on as you are heading out to work in the morning.
Beef Stew Ingredients
This Vegetable Beef Stew is simple to make because you can make it in a variety of ways. You can substitute your favorite vegetables, spices and meat to suit your family tastebuds.
When you are thinking about the meat to add to your stew, make sure whatever meat you decide on it’s it cut into bite size pieces. I always get a steak or roast and ask the butcher to cut it in cube size. It’s cheaper that way instead of purchasing the meat already packaged in cube size.
Watch the sales and purchase whatever meat is on sale. Y’all know Kroger is my favorite grocery store. I will look at the meat they have on clearance and will use that meat if I’m cooking the stew that day. Don’t forget you don’t need the most expensive meat for your beef stew to be good.
Now the vegetables are the most easy ingredient to pick out. Since most of the time I cook this in the winter time and I’m unable to get all fresh vegetables, I will use frozen vegetables. I don’t skimp on the number of vegetables I put into my beef stew.
I will cut up the carrots and potatoes; however, I will use corn and green beans out of the can.
The options are many and the decision is yours to make.
Beef Stew Recipe
Ingredients (this will feed a family size of 2. You may have to double the ingredients for your family size)
1.5 lb Chopped beef (I had the butcher to cut up a steak into cubes. It was cheaper than purchasing the beef already chopped and packaged)
4 medium size Potatoes
2 cans Carrots (I would have chopped up a bag of carrots but I just didn’t feel like it)
2 cans Green beans
2 cans English peas
2 cans of whole kernel corn
16oz Beef broth
½ tsp cornstarch
2 beef bouillon cubes
Black pepper
Salt
Flour to coat chopped beef
½ onion chopped
½ green bell pepper chopped
2 basil leaves
3 cups of water
Cooking Instructions
- Season and coat the beef. Cook beef, onion, and green peppers in cast iron skillet with a little oil in the skillet. Sear beef on all sides until lightly brown.
- Sir cornstarch in the water. Mix well.
- Place broth, bouillon, cornstarch water, beef with onion and green peppers, carrots, green beans, English peas, corn into a crockpot. Cook on high for 4-6 hours or low for 8-10 hours. Actually just set it and forget it. The crockpot will do all the work for you.
Now you know what seasoning your family like, please use this recipe as a base. Add or take away from it as you deem necessary. This is a great base recipe that can be doctored up to fit your family taste buds.
Do you like cornbread of crackers with your stew?
We normally eat cornbread with our vegetable beef stew but you can enjoy this with or without a bread or cracker.
We are in for many more cold days and just know this vegetable beef stew will make an appearance at my house again before the weather changes to warm temps.

I love easy crock pot recipes and this homemade beef stew is perfect during the winter! We have added sweet potatoes in ours before we gives it just a hint of a sweeter taste and everyone loves it!

Nothing better than a yummy beef stew during the cold winter! I prefer cornbread with my beef stew but crackers do work well too!
