I know this blog is not a food blog, but every so often I feel like cooking. No I don’t cook everyday but when the cooking bug hits me I can really throw down in the kitchen. I wanted to try something new with these strawberries I had purchased at Kroger. I had never made a strawberry shortcake before so hey why not. Plus it would be the perfect dessert to have for a date night snack!
So me being adventurous and wanted to make this dessert very special, I decided to make the strawberry glaze instead of buying store bought. I mean how hard could it be?
Well it wasn’t hard at all:
1 cup of sugar
3 TB Corn Starch
8 Sliced Strawberries
Place all the ingredients in a boiler. Bring to a boil. Stirring constantly. Cook until the sugar is dissolved and the strawberries are liquid.
Easy peasy right!?!
Now the assembly of the strawberry shortcake was even easier.
1 (10 inch) angel food cake
2 (8 ounce) packages cream cheese, softened
1 cup white sugar
1 (8 ounce) container frozen whipped topping, thawed
1 quart fresh strawberries, sliced
Strawberry glaze (see recipe above)
Directions
- Crumble the cake into a 9×13 inch dish.
- Beat the cream cheese and sugar in a medium bowl until light and fluffy. Fold in whipped topping. Mash the cake down with your hands and spread the cream cheese mixture over the cake.
- In a bowl, combine strawberries and glaze until strawberries are evenly coated. Spread over cream cheese layer. Chill until serving.
My husband really impressed with my cooking skills. You know its all good when he keeps asking for more! You really should make this for your next date at home. Enjoy!
